Ability to Tag an email in OL while you are drafting - Not after it was sent

To have to take the extra step of opening our sent items and then tag from there is not conducive to a good work flow. It seems like such an unnecessary extra step. If the tagging is available while drafting, your whole process for the task of the email is complete.
